From Cherry Pie & a Hot Cup of Java: The Mar-T Cafe, North Bend Washington
Pre-heat oven to 350° F. Grease and flour a 13x9" pan.
In a large bowl combine:
| 2 | cups flour |
|---|---|
| 1 | cups sugar |
| 2 | teaspoons baking soda |
| 1/4 | teaspoons salt |
| 2 | teaspoons cinnamon |
| 2 | teaspoons cloves |
| 4 | teaspoons nutmeg |
Beat into dry ingredients, and mix until smooth:
| 1 1/2 | cups vegetable oil |

| 4 | eggs |
Mix in:
| 3 | cups grated carrots |
|---|---|
| 1/2 - 1 | cup chopped walnuts |
Pour into pan. Cook 45 minutes to 1 hour at 350° F.
| 12 | ounces cream cheese |
|---|---|
| 1 | teaspoon vanilla |
| 1/2 - 3/4 | cup powdered sugar |
Cream cheese and vanilla together. Sift in sugar to taste. Frost cake when cool.
